Edge grain cutting boards are constructed by gluing together strips of premium hardwoods side by side leaving the wood fibers to run horizontally. Edge grain cutting surfaces are considered knife-friendly and more hygienic compared to other materials like plastic or glass cutting boards. Knife marks on the board can easily be removed with a light sanding and application of a food grade mineral oil and wax to reveal a fresh, new cutting surface.
